Breakfast Tostadas

Who knew that Mexican tostadas can be turned into breakfast?

Ingredients

  • 2 Whole Eggs
  • 2 Corn Tortillas
  • 2 Tbsp Fat-Free Refried Beans
  • Pico de Gallo (chopped tomato, jalapeño, and onion)
  • Avocado
  • Hot Sauce

Instructions

Step 1

Bake your corn tortillas at 400F for 10 minutes and flip them halfway.

Step 2

Prepare your scrambled eggs.

Step 3

Heat your beans.

Step 4

Top corn tortillas with beans, scrambled eggs, pico de gallo, and avocado, and drizzle with your favorite hot sauce.

Step 5

Enjoy!
