Cauliflower Rice
- 1 Bag Cauliflower Rice
- 1 Tbsp Sesame Seed Oil
- 1/4 Chopped Onion
- 1 Tsp Minced Garlic
- 1/4 Chopped Red Pepper
- 1/4 Chopped Orange Pepper
- Salt and Pepper
- Coconut Aminos
Poke Bowl
- Fried Cauliflower Rice
- Reduced Sugar Dried Cranberries
- Chopped Cucumber (no seeds)
- Chopped Carrots
- A Protein of Choice (fresh tuna, salmon, crab meat, cooked shrimp, etc.)
- Black Sesame Seeds
- Seaweed
- Avocado
- Coconut Aminos
Instructions
Cauliflower Rice
Step 1
Cook cauliflower rice bag according to instructions.
Step 2
Heat sesame oil in a large nonstick skillet over medium heat, add the onion and garlic stirring occasionally, until softened but not browned.
Step 3
Add the peppers until fully cooked.
Step 4
Add the cooked cauliflower rice and stir until golden brown.
Step 5
Taste and adjust seasoning with salt, pepper, and coconut aminos.
Assemble Poke Bowl
Step 1
Place Fried Cauliflower Rice in a bowl.
Step 2
Top with chopped cucumbers, carrots, and the protein of choice.
Step 3
Add the dried cranberries, seaweed, sesame seeds, and avocado.
Step 4
Add coconut aminos if necessary
Step 5
